How It Works

Budding winemakers are assigned a row of vines from Knapp vineyards –Chardonnay, for one growing season. Each student will work on the following essential wine operations through the course of the year and receive hands-on training from Knapp professionals. Each step will take you closer to producing your personal vintage. The program is designed to immerse you in the fundamentals of viticulture and winemaking techniques and to set you on your way in producing quality wine. This program is designed for serious hobbyists and passionate wine lovers.

  • • Pruning -Learn basic vine biology, pruning styles and methods.
  • • Tying –Discover several different styles and construction of trellis systems.
  • • Shoot Positioning- Determine how canopy management affects ripening.
  • • Harvest- Find out how to gather samples and measure sugar and acid ratios to decide when grapes should be picked.
  • • Winemaking 101-
  • A distillate session will also be included.
  • Food & Wine pairing session with Executive Chef.
