Piedmont to Sardinia-  The Piedmont region in Italy is located on the northwest corner of the boot, it hugs southern France.  Sardinia is an island southwest of Piedmont.  Sardinia is said to be one of the most ancient lands of Europe, as well as a stop on the trade route from the south to Great Britain.  We hope to bring you a local food journey of these two areas.  Piedmont is known for its exquisite beef, white truffles, and rich pasta, while Sardinia boasts rich cheeses and plates of seafood with saffron flavors.  This is a five-course meal paired with premium wines from Knapp Winery, Chateau LaFayette Reneau Wine Cellars, Zugibe Vineyards and Glenora Wine Cellars. 1st Course- Culurgiones

 

Dumpling of handmade pasta stuffed with potato, nutmeg, fresh mint and pecorino cheese. Served in a pool of sun-dried tomato sauce.

2nd Course- Minestrone

Fresh tomatoes, fennel, cannellini beans, garbanzo beans, potato, fava beans, and semolina pasta in a rich stock topped with Pecorino Romano shavings.

3rd Course- White truffle & Rabbit arancini

White truffle risotto stuffed with gently stewed rabbit and fried, served in a pool of wild mushroom demi-glace.

Entremets- Limoncello Sorbetto with strawberry lavender coulis

4th Course- Filet of beef

Grilled filet of beef with Gorgonzola, pine nut and herb butter over whipped artichoke and roasted cauliflower puree and finished with a balsamic reduction

5th Course- Panna Cotta

Almond and lemon pannacotta topped with Limoncello macerated berries and sweetened whipped cream. Finished with almond crisps.
