Finger Lakes Harvest Wine Dinner September 18, 2010 Make Your Reservations Early! 800.869.9271 First Course- Acorn and butternut squash bisque with spiced pears and Stonybrook butternut squash seed oil. Second Course- Smoked salmon and caramelized shiitake mushroom crepes with a lemon red onion and caper rouille. Drizzled with a dill creme fraiche Third Course- Roasted home-grown beet and heirloom tomato panzanella with caramelized Lively Run Chevre on a bed of crisp local field greens. Entremets- Limoncello, pear and fresh rosemary Granita. Fourth Course- Herb crusted rack of lamb with shallot merlot glaze. Served with sauteed kale with New York State maple and tarragon spiked sweet potatoes. Dessert- Pumpkin creme brulee with brandy honey whipped cream and candied spiced walnuts.
