7 p.m. Five Course Dinner

Five course menu prepared by Executive Chef John McNabb. Food pairings with Rieslings will include:

1st Course-
Poached Pear Salad
Crisp field greens, candied walnuts, Gorgonzola cheese, and fresh poached pears
finished with a blackberry and apricot vinaigrette
* 2006 Knapp Estate Dry Riesling and 2008 Knapp Estate Riesling- Tank Sample

2nd Course-
Baked Brie en Croute
Soft ripened brie wrapped in puff pastry and baked golden brown.
Served with artisan crackers, a fig and strawberry coulis, and a proscuitto wrapped melon satè.

3rd Course-
Limoncello Salmon
Filet of Norwegian Salmon grilled and baked, finished with a Limoncello beurre blanc sauce. Fresh haricot vert and creamy citrus risotto made with Finger Lakes Farmstead Cheese Co.’s Herbs de Provence cheese.

Chicken Breast
Asiago crusted pan-seared chicken breast Limoncello beurre blanc with wilted spinach & tomatoes over angel hair pasta.

Entremets
Kiwi and pineapple granite stuffed lemon, made with 2007 Knapp Dry Riesling

5th Course-
Raspberry, white chocolate and Mascarpone mousse en croute
A velvety mascarpone mousse piped into white chocolate phyllo cups, served in a pool of wild berry coulis and fresh mint.
