The Southern Hemisphere will influence the creative juices of our chef who promises to be inspired by the tropical menus that traditionally include papaya, prickly pears, planets and guava to name just a few. The countries of Jamaica with their jerk specialties and other tropical islands will be featured alongside premium award winning wines from Knapp Vineyards. 1st Course
Field Green salad tossed in a light prickly pear, mandarin orange and brut vinaigrette,
with julienned jicama, toasted coconut and pineapple. Topped with fried plantain.
2nd Course
Conch fritters with smoked pepper mango sauce on a bed of margarita slaw.
3rd Course
Chilled avocado and black been gazpacho with a ginger, lime and pineapple creme fraiche.
Entremets
Papaya and blood orange granite
4th Course
Adobo glazed char broiled N.Y. strip and blackened sea scallops served with citrus
mashed potatoes and a fresh tropical fruit chutney.
5th Course
Bananas Foster over rum infused pound cake and Cayuga Lake Creamery’s Rum
Raisin Ice Cream with toasted macadamia crumbles.
