Roasted, flame broiled, smoked and grilled will be the style of cooking used by our chef to create a thrilling wine dinner. The gastronomical display of charbroiled foods will satisfy the outdoor food aficionados with a gourmet flare. First Course Grilled Caprese Salad- Fresh grilled beefsteak tomatoes and mozzarella slices over a bed Second Course Roasted Pepper Bisque- Fire roasted pepper and smoked gouda bisque with a fresh tarragon crema. Third Course Grilled Stuffed Prawns- Fresh prawns butterflied and stuffed with artichoke heart and feta cheese and wrapped in proscuitto. Grilled and served atop a grilled leek polenta cake and drizzled with butternut squash seed oil. Fourth Course Grilled Swordfish- Grilled Swordfish filet with fresh cilantro and key lime chimichurri sauce. Served over herbed rice pilaf and haricot vert. Fifth Course Grilled Peaches a la Mode-Fresh sugared gilled peaches drizzled with a raspberry and semi dry Riesling sauce, over vanilla bean chiffon cake and topped with Cayuga Lake Creamery’s Knapp Chardonnay Raspberry Ice Cream.
