Ahh, the waters and the land of the Mediterranean region. There are twenty-one countries that make up the Mediterranean and their diets are promoted heavily in many health magazines. In their recipes hailed from Southern Italy, Greece, Morocco, and Spain dishes include brilliant herbs, nuts, and spices ranging from basil, capers, dill, cumin, and cinnamon to garlic, pine nuts, almonds, and saffron. 1st Course- Couscous salad
Couscous, tomato concassé, chiffonade of basil, Kalamata olives, brined feta and lemon thyme vinaigrette served over radicchio lettuce and finished with fried artichoke hearts.
