
Barrel Reserve (Aged) Chardonnay 2021
This Chardonnay was barrel aged for eight months in French oak. The result is a full bodied wine with subtle oak influence on the nose with lots of apricot, yellow peaches, and baking spice (clove, allspice). On the palate, bright notes of lemon zest is tempered by dried apricot, papaya, and apple. From the oak, sweet vanilla and light toast carry into the extended finish.

Winemaker Notes
Fermented at low temperatures in stainless steel before being transferred to barrel at the end of fermentation. Partial malolactic fermentation to add body and temper the acidity. Lees stirring weekly for mouthfeel. 10% Chardonnay fermented in cement egg also added for texture and complexity.
Food Pairing Notes
Pairs very well with seafood or dishes with rich, honey-like elements. Try it with fresh halibut, butternut squash soup, or homemade baclava.
